Aged Under Big Bend Skies

Aged Under Big Bend Skies

Out in Marathon, the evening show starts when the sun slips below the horizon and paints the desert copper. A few minutes later, the stars arrive by the thousands. It’s the kind of sky that gets strangers talking. Plenty of those conversations happen on the patio at Desert Ghost Distilling Company. The small-batch distillery sits on the western edge of this tiny West Texas town.

The story behind the bottles goes back to the 1880s. That’s when Benjamin Franklin Roberts was moving cattle across the borderlands and distilling whiskey from a family recipe. Generations later, his great-great-grandson Cody rediscovered the original mash bill. He and longtime business partners Chris and Jeff built a whiskey brand around it. Every batch starts with that same recipe and a 100-gallon pot still. The barrels then rest deep in the Chihuahuan Desert, where daily temperatures can swing 60 degrees. All that heat and chill pushes the whiskey in and out of the oak faster than a milder climate would. The Bastard Bourbon is the flagship. It spends four years in the barrel and pours smooth, with gentle spice and a sweet oak aroma. Each bottle is still filled and labeled by hand.

Inside the tasting room, the menu runs from honey bourbon made with wild desert honey to cocktails and wood-fired pizza. Local singer-songwriters keep the stage busy, and kids and well-behaved dogs are welcome. It all lives up to the distillery’s tagline: “Small Batch Bourbon Handcrafted & Desert-Aged In Marathon, Texas.” This year, Desert Ghost Distilling Company is celebrating their 2026 Best of Texas Award. Under those desert stars, it’s a fine excuse for another round on the patio.
