Seven Decades of Fresh Masa
The first tortilla off a warm stack rarely makes it to the table. Somebody always rolls it up and eats it standing at the kitchen counter. It's still almost too hot to hold, and nobody minds one bit. In Historic Downtown Brownsville, that little ritual has a long local pedigree. It started in 1952, when Ester Limon began handcrafting corn tortillas in what's now the Mitte Cultural District. Today, her original recipe lives on at Anita's Tortilleria.
Her daughter Irema and son-in-law Beto Medrano took over in 1982. The current owners picked up the torch in 2009 and renamed the shop Anita's Gourmet Tortilleria y Comida. The masa, however, hasn't changed. It still starts with dry whole-grain white corn cooked with food-grade calcium lime. There are no additives or preservatives, just as Mrs. Limon made it. That same pure white corn masa anchors the tamales. Their depth comes from a smoky red chili sauce. The team boils dried peppers to coax out the flavors, then blends the sauce into both the masa and the fillings. Seasoned lard and a house spice mix finish the job. For a lighter take, the kitchen swaps the lard for premium olive oil. Those olive oil tamales have become a local favorite with healthcare professionals and anyone with dietary restrictions.
Every tamale is made fresh daily, and the shop's drive-thru keeps tortillas and tamales moving quickly out the window. The team also gives back to the community by supporting several local organizations. That steady commitment has brought eight consecutive Reader's Choice wins for Best Tamales in Brownsville, in addition to earning the Texas Treasure Business Award by the Texas Historical Commission. Now it's also earned the team their 2026 Best of Texas Award. Plenty of those drive-thru orders won't survive the ride home intact, and that first warm tortilla is usually the reason.
