The Tailgate Takes the Breakfast Shift!

The Tailgate Takes the Breakfast Shift!

College football is coming back to Texas before lunch. When TCU kicks off against North Carolina at 11 a.m. Central on Aug. 29, the first serious tailgate of the season may need coffee, brisket and a very early alarm.

The Horned Frogs will open their 2026 season against North Carolina in Dublin, Ireland, as part of the Aer Lingus College Football Classic. According to the TCU football schedule, kickoff lands squarely in the middle of the Texas morning. The matchup also marks TCU’s first football game outside the United States.

For fans watching from Fort Worth, that changes the usual game-day math. There is no leisurely afternoon for firing up the smoker or hovering around the grill. Breakfast is the tailgate.

Brisket Belongs at Breakfast

Fortunately, Texans have never needed much convincing to eat smoked meat before noon. Hurtado Barbecue in Fort Worth starts serving breakfast at 7 a.m., with tacos that pair eggs with barbecue-friendly fillings. That makes brisket an easy anchor for a home tailgate.

The smartest spread is one that can mostly be assembled ahead of time. Warm tortillas, chopped or sliced brisket, scrambled eggs and bowls of salsa let guests build their own tacos without turning the host into a short-order cook. Add breakfast potatoes, shredded cheese and pico de gallo for people who believe tacos deserve options.

Something sweet keeps the table from becoming entirely meat-and-salsa territory. Black Rooster Bakery brings scratch-made pastries into the equation, including croissants, muffins and other breakfast-ready baked goods.

Fort Worth’s Mexican-food roots offer another natural direction. Esperanza’s comes from a family tradition of serving the Fort Worth and Dallas area dating to 1935. Its breakfast menu includes handmade flour tortillas, breakfast tacos, chilaquiles, migas and plenty of salsa-friendly possibilities.

Coffee Before Kickoff

Then comes the essential piece: caffeine. Set up a self-serve coffee bar with regular and decaf coffee, cream, sweeteners and insulated cups, preferably within reach of the television.

An 11 a.m. kickoff may rearrange the ritual, but it hardly has to shrink it. The smoker can take a supporting role, breakfast tacos can replace the burger buns, and football still gets a full table.
